“Cheater” spicy peanut noodles

This simple weeknight meal takes just minutes to make and clocks in at less than 300 calories per serving. Skip the hot sauce for a dish the kids are sure to love, or make an easy meal for two by doubling the recipe and topping it off with your favorite veggies. Ingredients

  • 4 ozs noodles (udon, soba or another favorite)
  • 2 tbsps plain soy yogurt
  • 1 tbsp peanut butter
  • 1 tbsp low-sodium soy sauce
  • Asian hot sauce (e.g. Siracha), to taste
  • bean sprouts for garnish (optional)
  • green onions, sliced, for garnish (optional)

Directions

  1. Cook noodles according to package instructions, drain, and rinse with cold water.
  2. While the noodles cook, whisk yogurt with peanut butter and soy sauce (reduce if your peanut butter is salty) and hot sauce to taste.
  3. Garnish with bean sprouts and green onions, if desired, and serve.
